Sharp headache and loss of vision?

In 2016, my mother started to suffer from a strong headache, after several days, her vision started diminishing and she had a foggy vision. She went to an ophthalmologist but he couldn't identify her illness and he told her to go to a neurologist, she did and the same thing happened, after a lot of medical analysis and exams, he couldn't identify the illness. She didn't lose hope. She went to more than 5 neurologists and 2 psychiatrists (because a doctor told her it might a psychological problem). All the treatments didn't give any results, but the headache wasn't consistent anymore and she only suffer from time to time but her vision was always 4/10. A month ago, my mother again started to suffer from a consistent headache and her vision also started to diminish more and more until she became blind in one eye and barely she can see in the other one, after visiting a neurologist that couldn't identify the problem and an ophthalmologist that told her that her left optic nerve is completely damaged and her right eye is 1.5.

that should be handled by a neuro-ophthalmologist
There are many different causes for this type of vision loss including giant cell arteritis, multiple sclerosis, idiopathic intracranial hypertension, hypertension, central retinal artery occlusion, stroke, toxic neuropathy, etc, etc. Please make sure your mother is evaluated by a University level multispecialty ophthalmology team.
