Non-celiac gluten sensitivity, and Celiac disease are chronic conditions and do not present as acute “attacks”.
Diarrhea, bloating, anemia, weight loss, or bone fractures.
There is no such thing as a gluten attack. Some people with celiac disease will get symptoms with gluten ingestion, e.g., diarrhea, bloating. The same symptoms can happen with carbohydrate malabsorption.
