There are several techniques depending on the size of the Inter proximal cavity. Starting from applications of a product that stops the growth without having to drill the tooth to a filling
The carious lesion/ soft or affected dental tissue must be removed and possibly supported to withstand the biting forces once the filling is placed. The area is usualy no different other than obtaining access to the cavity.

They go through the occlusal or biting surface
Depending on the filling size and location the treatment can vary. However, the standard of care of a filling on the side of the tooth is to remove the decayed tooth structure, and fill, usually with a tooth colored material.
Numb it, remove decay, place filling.
Usually, dentists try to be very careful to remove only the decayed portion of your tooth. Sometimes, it is necessary to remove healthy structure to get to the decay. The decay is removed and a filling is placed. Dental students are trained in all manner of doing this. Removing as little as possible is always the plan!
Your American Dental Association Dentist will use the most conservative approach to access an restore your cavity on the side of the tooth.

It depends on the size and exact location as well as what caused the loss of tooth structure. If it is smaller and does not compromise the strength of the tooth then a tooth-colored filling works great. Things like small cavities, or erosion or abrasion of the tooth along the gums are areas that usually work best with a filling. If the affected area is bigger or undermines the outer cusps of the tooth then a crown may be more ideal.

It is often easy for a dentist to gain access to the side of a tooth. Caries is removed with hand pieces by cutting it away. Hand instruments may also be used to clean the affected area. The dentist will clean the area, place a bonding agent which is like glue, and then mold a tooth-colored filling material into the area. A curing light hardens the material, then it is smoothed, shaped, and polished to look like the original tooth.
The Dentist can fix a cavity on the side of the tooth by getting your tooth numb, using a bur to remove the cavity, then use different materials to bond a tooth-colored filling to the tooth.

Sometimes, depending on the size and location of the cavity, different treatments, such as onlays or crowns, may be necessary. Ultimately, this is something you should discuss with your general Dentist to be further evaluated and treatment planned accordingly.
