My doctor wants me to treat my chronic pain with anesthesia from my autoimmune disease. How does anesthesia work for pain management with chronic pain?

Anesthesia is palliative. It could improve your quality of life. Consult a pain management specialist.
General Anesthesia doesn’t inherently treat chronic pain. Your doctor may be thinking about ketamine which is an anesthetic and can be used to treat certain painful conditions.
