What is causing my eyes to be dry and itchy?

It sounds like you have symptoms of dry eye syndrome. This is more common with aging especially in women due to hormonal changes. It can also be related to diet, autoimmune conditions, allergies, genetics, environmental conditions, mechanical issues (eyes don't close all the way), etc.so you can see without a proper evaluation it is just guesswork as to what is causing your problems.
Allergic conjunctivitis and dry eye syndrome. Both are treated with medicines. Eye drops can be used for dry eyes or depending on the type of dry eyes, punctual plugs can be used. If it’s meibomian gland dysfunction, warm compresses can be done along with the use of omega-3 fatty acids.
Allergy and or OSD (ocular surface disorder)
It could be Dry Eye Syndrome with Blepharitis. See an Eye MD
