Mucus is probably accumulating in your throat when you lie down. A good lymphatic cleanse would be in order. I have great throat mucus clearing remedies.
If it's during sleep, that is often due to sleeping with your mouth open. If you mean evening as in after 5, it can be due to using your voice frequently and not breathing with your lungs when you talk.
While lying down at night, secretions may drain more into the throat. Also, many people sleep with their mouth open, causing increased throat irritation.
Do you breathe through your mouth at night? Do you experience nasal congestion? These are things that can make your sore throat worse by drying out your mouth.
