Digestive system?

When I go to the toilet [ poo ] and I eventually go my poo is the right color but always banana shaped. Sometimes I don't go for days on end and have lots of wind is this normal as it never used to be like this and I went every day.

The shape is normal. Not going for 1-3 days is also often considered normal. Increase fiber in your diet if you want to go more frequently. Make sure you are up to date on screening colonoscopy.
It appears that you have significant constipation and a change from your baseline. As this could be a serious condition, please see a gastroenterologist as soon as possible. They need to look at your diet, fiber intake, look for colonic pathology, polyps, cancer, or blockage (i.e., colonoscopy), CT scan (may be needed sometimes), thyroid profile may also be needed.
Most likely you must be suffering from constipation. So I will suggest you try to pick tablespoons of fiber powder and at least 6 bottles of water a day and see if that helps
