I have 7 missing teeth. Should I remove all my teeth and get dentures if I have several missing teeth?

You certainly do not need to extract all your teeth unless they have underlying conditions that will result in them needing to be removed, such as poor periodontal health . I would strongly suggest you visit your dental that he/she can help you and guide you to making the right choices with regard to your oral health
There are many options to replace missing teeth such as implants, fixed bridges, and partially removable dentures. It is best to have the remaining teeth evaluated and seek the best options.
It really depends on the health of your mouth. But as a general rule, no prosthesis will ever be as good as your your own teeth. Try to keep them for as long as possible. But again, it really depends on the health of the teeth and gums/bone around them.
