Throat issues?

Lately, I’ve been having an insane amount of mucus buildup. I’ve been having stomach aches, headaches, and I’ve been extremely fatigued. I tested for covid and it came back negative. Is it possible for it to be anything else? I definitely have pharyngitis and I do get it a lot however I’ve never had the other symptoms with it, usually just a sore throat. My tonsils are also a normal size.

It could be anything else. Think of each symptom as it's individual cause. Not all symptoms are attached to one answer.
Reflux and diet can change the production of mucus in the throat. Pharyngitis, viral or bacterial, can be exhausting. Mononucleosis is a common viral illness in your age group. I would ask to be tested for that. Although with any viral illness, you have to just wait it out. Your body has to get through it on it's own. Rest, hydration, Tylenol and Motrin to keep the fever down.
I would retest for covid and if negative I would order Ct sinus films.

Your photo reveals submucosal lymphoid tissue. This is indicative of upper airway allergies. Could do trial of Zyrtec and Mucinex to see if symptoms are better. Drink at least two-quarters of water per day. No smoking anything. If symptoms persist see an ENT and/or allergist.
The photo looks normal. (Not a substitute for a complete head and neck exam). You need a blood chemistry panel, to include thyroid function tests. You could start with an appointment with a good family doctor. Be sure you see an M.D.
