I have people who can still bend forward and touch their toes after scoliosis surgery.

however, that doesn't preclude the rest of your body from working.
Many people without surgery can't even touch their toes, so much of this range of motion has to do with other joints in the body, as well as muscle tightness.

Yes, you will. Depending on how long your fusion is, you may have some slight limitation in your side-to-side bending. Forward bending will be essentially normal because most of that comes from hip motion, not spine motion.
