I am a 34 year old male. My doctor suspects I have a sinus infection and ordered an X-ray. Does a sinus X-ray show infection?

Yes. It will show mucosal thickening( chronic sinus inflammation ) or air fluid level. Acute sinus infection.)
With all due respect, X-ray is useless. Get a dedicated sinus CT. Superior diagnostic capability AND surgical planning, if necessary.
