The immune system develops an IgE antibody to the food protein and that antibody triggers allergic cells to release mediators responsible for the symptoms of an allergic reaction - itching, hives, swelling, wheezing, and trouble breathing. etc. I would suggest seeing your kid's allergist and monitoring the food allergy on a regular basis.
