You may not like my answer but it is not clear that vitamin D needs to be supplemented. The published literature on this is of poor quality. Measuring vit D levels in the blood may be a reflection of an underlying inflammatory process (such as celiac) rather than a true deficiency. Once inflammation is successfully resolved, vit D levels return to normal even without supplementation.
There is no vit D "specifically designed for patients with celiac". This is a marketing ploy.
There are no randomized controlled trials of vitamin D vs placebo in people with inflammatory bowel disorders thus no clear benefit has ever been demonstrated. Association studies, anecdotes and theoretical advantages do not count.
Bottom line: my advice is to focus on control of the celiac with a gluten free diet and not get hung up on how much vit D should be given.

3. From stage 1 to 3 may take many months but progression is highly variable from person to person.

Another possibility is having a defecation disorder, though this would usually be found in someone much older than you. A good GI doctor can help do a diagnostic workup. Try to find a GI doctor who is capable of doing more than just a colonoscopy, which is not often helpful in the workup of constipation. Try over-the-counter Dulcolax and Miralax.
Otherwise, prescription laxatives may be needed.

Unlikely. Keep using laxatives to have regular stools. This should prevent any possibility of an impaction.

You should make a list of each regimen that you took and the doses of the medications. Clarithromycin is the antibiotic with highest resistance and should not be used. You can do sensitivity testing to find out which antibiotics the H pylori will respond to and use this information to guide the choice of the medications. You should see a doctor with experience in treating refractory H pylori. Most likely you will need high dose PPI, high dose amoxicillin and maybe rifampin to get rid of the infection.

Yes, it can. Bowel strictures, fistulas, obstruction, bleeding, perforation and cancer are all possible complications of IBD that is not well controlled by medications.
