All scars mature over the first 1-1.5 year. Eating a healthy diet, getting adequate protein, sleep, and following your physician's postoperative instructions are vital in the first few weeks of healing. It takes a full year to heal and at one month there is still a lot of swelling between the skin and the framework below. I'd recommend seeing your surgeon when he or she gets back into town. Regarding nostril sizes, this is something that patients always fixate

Light exercise like walking you can start a few days after surgery. Anything else I usually recommend waiting 2 weeks. The key for rhinoplasty surgery is keeping the swelling down while you're healing. Exercising during the acute recovery period can increase swelling and postoperative bleeding. Every physician has their own guidelines so this is a ballpark figure and I'd ask your surgeon their particular protocol.

Postoperative day 3 is usually the worst swelling. To decrease the swelling you want to sleep with your head elevated (keeping your head above the level of your heart helps the swelling resolve), apply ice to your cheeks (but don't get the cast wet), drink plenty of fluids, and avoid prepared foods/salt. Some surgeons prescribe a course of steroids after the surgery to help, but swelling for the first few weeks is very normal.
