Infection is always possible but the risk is less than 1% in clean cases.

No such thing as gallstone surgery. However, removing the gallbladder itself requires a general anesthetic.

Not painful but possibly uncomfortable. I'd say spring for some anesthesia.

Sounds like they are describing a hematoma. This can happen. Its like an internal bruise but a collected blood clot. These can time take for the body to fully resorb.

By stomach hernia I assume you have a hiatal hernia. Most commonly these are small, maybe 1 to 4 inches. This just means the stomach is 1-4 inches above the diaphragm and up into the chest. Personally I do not think this causes pain. However, hiatal hernias can worsen reflux which could cause esophagitis and both of these can cause pain. I recommend anti acid therapy with a PPI like Omeprazole and consultation with a Gi or Surgeon.

No, just anesthesia for the procedure.

You will feel sore for a week or two but shouldn't be pure pain.
